Blackened Hanging Tenders

 The butcher recommended giving hanging tenders a try. A friend of mine from Northern California butchered one of his own steers and reserved them for him self. He cooked his over a hot hardwood fire. They were excellent. I decided to blacken them and the flavor and tenderness was very nice.

  The crust is very simple: 4 C sifted flour. I like to use a hearty and healthful organic wheat berry usually Einkorn wheat berries milled in my flour mill. This adds a huge nutritional value important to me. If you don't care about the nutritional aspect of the dish, use commercial highly processed flour for a light and flakey texture.  3 T salt. I use Baja Gold 1 stick of butter. I use Kerrigold grass-fed unsalted butter. Using cold butter helps with the flaky texture. 1/2 C ice water
