1991 Black Bean Recipe





 



Per 4 LBS Black Beans

6         links of Chappell Hill Sausage (beef & pork with garlic) sliced thin
2         large onions - chopped into small bits
1         T freshly ground organic Tellicherry black peppercorns
1/2      T red pepper flakes finely ground in a spice mill
1/4      C soy sauce
2         T finely chopped fresh garlic
1         large V-8 juice - per the amount of beans (for liquid) beef broth works very well too

Soak and clean beans
Cook sausage and onions until brown

My my, Texas chili! I have cooked chili in Texas for over 30 years. The bottom line is there is no definitive recipe and method worthy of the name Texas Chili. As I am from Southeast Texas my information absorbed through the years has been swayed by the Mexicans and the Cajuns. In Southeast Texas we tend to take in information and modify to our melting pot palette’s perspective, always rich in flavor and usually spicier than most. Spice is nice! Well it has been a while since I have cooked us a real big pot of Texas Chili so I decided to get after it. Texas Chili has some common ingredients. Meat, chili powder, onions, camino (cumin), liquid (beef stock, V8, beer…………), cayenne pepper, black pepper, beef stock or boullian and garlic. I like to use Mexican oregano and Mexican camino. Meatloaf

Meatloaf  2#s lean grass fed beef hamburger 1 medium onion finely chopped 1 T finely chopped fresh garlic 1 T fresh cracked black pepper 1/2 T fresh basil 1 T granulated garlic 1 T granulated onion 1/2 T salt The juice of 2 limes  4 T liquid aminos ( I use low sodium soy in a pinch ) 2 large eggs 1 C bread crumbs finely chopped 1/4th C ketchup Method In a bowl thoroughly mix all ingredients and let it sit for a few minutes to let the bread crumbs soak up the moisture. After it has been thoroughly mixed. In a greased black iron skillet form a big hamburger and cook in the oven @ 350 for about 45 minutes or until it is browned a bit. After about 30 minutes pour off the fat.
