Fish Tacos pan-seared cod filets with jalpeno & mango pico de gallo and homemade flour tortillas

Fish Tacos

I wanted fresh pan-seared cod filets and I wanted a fresh pico de gallo with homemade flour tortillas to round out my fish tacos. They are decadent! God bless!

The ingredients are:

fresh cod filets
olive oil
granulated garlic
granulated onion
fresh cracked black pepper
Baja Gold sea salt
lightly dusted with corn starch

Pico:

tomatoes
onions
garlic
mango 
jalapeno
cilantro

My my, Texas chili! I have cooked chili in Texas for over 30 years. The bottom line is there is no definitive recipe and method worthy of the name Texas Chili. As I am from Southeast Texas my information absorbed through the years has been swayed by the Mexicans and the Cajuns. In Southeast Texas we tend to take in information and modify to our melting pot palette’s perspective, always rich in flavor and usually spicier than most. Spice is nice! Well it has been a while since I have cooked us a real big pot of Texas Chili so I decided to get after it. Texas Chili has some common ingredients. Meat, chili powder, onions, camino (cumin), liquid (beef stock, V8, beer…………), cayenne pepper, black pepper, beef stock or boullian and garlic. I like to use Mexican oregano and Mexican camino. Einkorn Wheat Sourdough Bread take 2

 I took one cup of my Einkorn Wheat starter and mixed in 3 cups of freshly milled einkorn wheat flour with filtered water. The texture is fairly wet. I let that ferment overnight. It was very active and frothy the next morning. I then mixed in about 4 cups of einkorn wheat flour in the mixer. I added 1/4th cup of raw honey, 1/4th cup of extra virgin olive oil and 2T Baja Gold sea salt. I mixed until the dough clinged to the dough hook and cleaned the sides of the mixing bowl. I gave it a good mix. I then took the dough ball and cut it in half without punching it down. I place the 2 loaves into proofing baskets and placed them on the counter covered with a dish cloth over night. The next morning the loaves had risen by 1/3rd. I then pre-heated the oven to 350 degrees for 38 minutes. They turned out excellent.
