Homemade Pizza

The crust is 2.2 pounds of Anna Napoletana Unbleached Ferina Di Grano Tenero - Extra Fine Tipo "00" wheat flour 100% Italiano - Central Market on sale for $2.00 each

Pizza Crust
2 Cups very warm water
1/3 Cup Organic Honey
1/3 Cup Organic first cold press extra virgin olive oil
1.5 T Red Star yeast
6 T Turbinado sugar
2 T pink Himalayan sea salt

Mix ingredients for about 10 minutes so the gluten is very well worked. Cover and let rise for about 30 minutes or at least double in size. Your environment may vary. Turn on the mixer to beat down and then oil a stainless steel mixing bowl, cover with plastic wrap and place in the refrigerator for 5 hours to proof. After proofing separate dough for 2 extra large pizzas or 3 medium. Liberally sprinkle organic cornmeal on a flat surface and work out dough to desired size keeping it well covered with cornmeal. I use a pizza pan with many holes on it to cook mine. I also have a pizza stone that works great. Just use the best you got! A large cast iron skillet works for just about anything! After my dough is placed on the pizza cooking sheet I add the pizza sauce and high end pepperoni. I call it pepperoni, but it is really uncured Sopressata purchased at Whole Foods in the deli section. They let me try various Italian sausages and they were all delicious! Use what you want, I used Sopressata on this pie.

Pizza Sauce
I chopped up 1.5 large red onions and sauted them with 5 or 6 Tablespoons of olive oil. After the onions were well on the way to being browned I added 1 pound of mini portabella sliced fat. I then added about 2 tablespoons of fresh cracked Tellicherry black peppercorns, 2 tablespoons of pink Himalayan sea salt. I rough chopped 1/2 cup of fresh garlic cloves, I probably used more? I then added 3 tablespoons of organic dried oregano and 2 tablespoons of dried cilantro. I cooked all the above ingredients in a black iron skillet for a few minutes and then I added 2 cans of organic tomato sauce. I let it cook together for a few minutes stirring constantly. You want it to be pretty firm. Then I let rest for a minute or two and I evenly distribute on the crusts. At this point I use grated Mozzarella cheese I buy from Costco. It is a real good product. I lightly cover the entire surface of the pie and then I add the meat and any other desired topping. We like artichoke hearts, black olives and many others.

Place the pies in an oven at 450 degrees for about 20 minutes. Check on it and take out at desired golden brown. Enjoy ~
