Homemade Pizza

The crust is 2.2 pounds of Anna Napoletana Unbleached Ferina Di Grano Tenero - Extra Fine Tipo "00" wheat flour 100% Italiano - Central Market on sale for $2.00 each Pizza Crust 2 Cups very warm water 1/3 Cup Organic Honey 1/3 Cup Organic first cold press extra virgin olive oil 1.5 T Red Star yeast 6 T Turbinado sugar 2 T pink Himalayan sea salt Mix ingredients for about 10 minutes so the gluten is very well worked. Cover and let rise for about 30 minutes or at least double in size. Your environment may vary. Turn on the mixer to beat down and then oil a stainless steel mixing bowl, cover with plastic wrap and place in the refrigerator for 5 hours to proof. After proofing separate dough for 2 extra large pizzas or 3 medium. Liberally sprinkle organic cornmeal on a flat surface and work out dough to desired size keeping it well covered with cornmeal. Blackened New York Strips

On rare occasion we have steak. Growing up we used to have t-bones once a week or so. Paul Prudhomme is one of my culinary heroes. Every time we go to New Orleans K-Paul's is one of our favorites. As I have mentioned before in this blog, Paul Prudhomme perfected the blackening method and passed his knowledge on to others. For that I am very appreciative. I squeeze a fresh lime or 2 all over the steak and rub it in. I then dust with fresh cracked Tellicherry black peppercorns, granulated garlic, granulated onion, Lawry's seasoned salt that was previously pulverized in a spice mill and that's it. I then heat up a cast iron skillet outside until it is real hot. I then take a generous chunk of Kerrigold unsalted butter and throw it in the skillet. Then I put the steak in the skillet and have a large spatula handy. Keeping the spices attached to the meat is very important for the quality of the final product. Southeast Texas Cornbread

2 C wheat flour made from milling soft summer wheat berries  2 C cornmeal 1 T vanilla 1/3 C honey 2 eggs 2 C whole milk 1/2 C cheddar cheese 1/2 C bacon 4 large fresh jalapenos chopped 5 T bacon grease 2 t salt 2 T baking powder Put bacon fat in mix and use for coating skillet. Mix together dry ingredients. Beat wet ingredients and combine and don’t over mix. Pour ingredients into a cast-iron skillet and bake at 350 for about 25 minutes

Homemade Popcorn that's good for your mental health ~

We like popcorn in my family. But, too much butter is not good for you. Recently, reports indicate coconut oil is good for your brain and may well help stave off Alzheimer's and dementia. With that in mind, I have tried to incorporate coconut oil into our diet.  I do realize too much salt is bad for you, so I use small amounts. Here are the ingredients: 3 T organic coconut oil 1 cup of organic yellow popcorn 1/2 T of Lawry's Seasoned Salt - I pulverize the Lawry's in a spice mill and place it in the botton of a paper grocery sack and then put the popped popcorn in the grocery sack and roll down the sides and shake violently to distribute the salt. It works great and it coats the kernels. The outcome is a delicious popcorn arguably good for you. Enjoy ~

Homemade Pizza Dough 4 Cups 000 flour 1 T yeast 1/3 Cup honey 1/3 Cup olive oil 2 Cups warm water 3/4 T salt 2 T cane sugar Let dough rise till double in size. Beat down and refrigerate over night. Generously dust a dry surface with corn meal and form to your liking. Makes 2 large medium crust pizzas ~
